Ingredients

pork shoulder or pork tenderloin, 1-2 pounds

gourmend taco seasoning, 1 ½ teaspoon

gourmend garlic chive powder, ½ teaspoon
-
gourmend green onion powder, ½ teaspoon
-
kosher salt, ½ teaspoons
-
orange, 1 juice and zest
-
lime, 2 juice and zest
-
gourmend organic beef bone broth, 1 ½ cups

gluten free tortillas, 8
-
pepper, 1 diced
-
tomato, 1 diced
-
romaine lettuce leaves, 2-3 thinly sliced

Directions
In a small bowl, combine the taco seasoning, garlic chive, green onion powder, and kosher salt.
Place the pork in a pressure cooker or instant pot and rub the spice rub all over it.
Mix the zest and juices from both the orange and limes with the beef stock. Pour over the pork, close the lid and cook on high for one hour.
Release the steam and shred with a fork.
Heat your oven on broil. Onto the baking sheet, place as much meat as you’d like per person, about 2-3 tablespoons per taco. Spoon a little of the roasting liquid on top.
Place under the broiler for 2-3 minutes just until the meat gets crispy.
To serve, heat your tortillas, place the pork on top and serve with your favorite FODMAP friendly toppings.
