Low FODMAP Chicken Lettuce Cups
You don't need to go to a restaurant to have delicious lettuce cups! This delicious appetizer has a nice refreshing crunch and a great flavor featuring Gourmend Garlic Chive Powder.

Ingredients

tahini, 2 tablespoons

soy sauce, 3 tablespoons

rice vinegar, 3 tablespoons

lime, 1 juice and zest

gourmend garlic chive powder, ½ teaspoon

small cucumbers, 2 quartered, julienned

rice vinegar, 3 tablespoons

water, 1 cup

olive oil, 1 teaspoon

ground chicken, 1 pound
-
carrot, 1 washed, peeled and diced

pepper, 1 washed and diced
-
head of Boston or Bibb Lettuce, 1 washed and separated

salt and pepper, freshly ground, to taste

Directions
In a small bowl, combine all the ingredients for the sauce. Set aside.
In a bowl, combine the ingredients for the cucumber pickle, set aside.
In a large skillet, add the oil and bring to medium heat. Add the chicken, season with salt and pepper and cook thoroughly, carefully breaking it up. Once the chicken is almost cooked, add 2-3 tablespoons of the sauce. Once the chicken is cooked through and broken up, remove from heat and set aside.
In the same saucepan, add the carrot and bell pepper. Cook until the vegetables are just soft to the touch, about 2 minutes. Add the chicken back in and mix well to combine. Remove from heat.
Serve family style with the lettuce cups, chicken and cucumber pickles. To make a lettuce cup, fill a lettuce leaf with the chicken mixture and top with a pickle, enjoy!
