Low FODMAP Beef Lentil Stew
Lentils, pasta, and Gourmend Beef Broth make this soup a great gently delicious option throughout soup season! This recipe, based loosely on Rishta, a Lebanese lentil and pasta soup, uses Gourmend Green Onion Powder in place of onions to keep it delicious but make it more gut friendly!

Ingredients

olive oil, 2 tbsp

scallions, green parts only, ½ cup diced

fresh cilantro leaves, 2 cups finely chopped & divided

gourmend beef broth, 8 cups

gourmend green onion powder, 2 tsp

ground coriander, 2 tsp
-
cumin seeds, 1 tsp

gourmend garlic chive powder, ½ tsp

gluten free tagliatelle or fettuccine, 4 oz broken into bite sized pieces

brown lentils, 1 cup canned, drained of their liquid & rinsed

salt and ground black pepper, to taste
Directions
In a dutch oven or large pot, heat the oil over medium heat. Once oil is shimmering, add the diced scallions & half of the cilantro and cook, stirring occasionally until scallions are tender, about 5 minutes.
Add Gourmend Beef Broth, then add in cumin seeds, ground coriander, Gourmend Green Onion Powder & Garlic Chive Powder and salt & pepper to taste.
Allow broth to come to a boil. Add in gluten free tagliatelle, then reduce the heat until the liquid is simmering, cooking the pasta for about 10 minutes until it is just tender.
Add in the canned lentils about 5 minutes into adding the pasta so they do not overcook.
Taste one last time & adjust seasonings as needed. Serve with the remaining chopped cilantro on top.
Recipe Note
NOTE: You can also use Gourmend Vegetable Broth for a vegan option!
