Ingredients

gourmend vegetable broth, 4 cups

carrots, 1 lb peeled & chopped

ginger, 1 tbsp minced

bay leaf, 1

cinnamon, ½ tsp

salt and ground black pepper, to taste

coconut milk, 4 tbsp (optional for garnish)
Directions
Add Gourmend Vegetable Broth to a large pot or Dutch oven and bring to a boil. Once boiling, reduce the heat to low & add chopped carrots, ginger, bay leaf and seasonings.
Place a lid on the pot and simmer for 30minutes or until the carrots are soft.
Let the soup cool slightly, remove the bay leaf, then puree using a handheld immersion blender or transfer to a blender. If the soup is too thick you can add a bit of water or more broth to thin it out to your liking.
Garnish with 1 tbsp of coconut milk & serve.
